Gluten Free Dreams was my first forray into not-from-scratch vegan baking. And lemme tell you I was NOT let down! The sugar cookie dough was delicious and almost (but only almost) didn’t make it into the oven and the chocolate frosting left little to be desired.
I did add my own two-cents. I put in about 1/4th cup extra soymilk (and I used Silk Vanilla Lite, not plain) and added abou 3/4th cup more sugar. Not the healthiest additions, but in my opinion the cookies would have been lackluster without the additions.
I had only one complaint about the chocolate frosting: too sugary. It didn’t taste like chocolate, it tasted like fluffy sugar. It was very rich, but in a bad overly suggary way.
For chocolate chips I used Enjoy Life Semi-Sweet Vegan Chocolate Chips.
Overall I was very satisfied, I chose to make my cookies larger than 1 inch balls and so they took about 30 minutes. Yeah, I have a giant cookie fetish, too.
